85% Chardonnay, 15% Pinot Noir Produced using whole-bunch handling and a selective pressing programme, this Cap Classique draws from a geographically diverse selection of grapes sourced from Robertson, Darling, Stellenbosch, and Cape Agulhas. Only the cuvée fraction was retained after juice settling, with 15% of the Chardonnay fermented in fourth-fill Pièce Champenoise barrels. A sparkling wine uniquely South African.
